Plant Paradox, Genius Foods, Good Energy, and Deep Nutrition all limit refined seed oils. Dr. Cate Shanahan's Deep Nutrition makes the sharpest case, backed by real toxicology (Grootveld's lab) on toxic aldehydes formed when these oils hit frying temperatures — the most family-relevant takeaway: avoid reheated or restaurant fry oil most of all. Older RCT reanalyses (BMJ) also found a mortality trend against linoleic acid substitution. Newer biomarker studies on everyday (unheated) intake still lean neutral-to-protective. Outlive is the outlier here: cut back, don't eliminate. A genuinely live scientific fight.

How he picks a bottle
- Certified organic
- A harvest date on the bottle, not just "best by"
- A specific regional origin, not just "imported"
- Taste it — a peppery bite or throat catch is a good sign
- A price that isn't suspiciously low for EVOO
Extra-virgin olive oil isn't just on Lugavere's list — it's Genius Food #1, chapter one of the book. His case: EVOO is rich in monounsaturated fat and a polyphenol called oleocanthal, which he ties to lower brain inflammation and to autophagy, the process cells use to clear out debris like amyloid plaque. His test for a good bottle: real EVOO should make you cough slightly or feel a peppery catch in your throat — that's the oleocanthal. A bland bottle is a sign it's old, adulterated, or not really extra-virgin. Shanahan (Deep Nutrition) independently names olive oil among her handful of approved cooking fats, alongside avocado and macadamia. Separately: olive oil is one of the most adulterated foods in the world, and much of "extra virgin" on shelves fails the legal standard.

Practically speaking, olive oil is our cooking oil of choice for almost everything — vegetables, scrambled eggs, meat, all of it. We reach for avocado oil specifically when we need real high heat (searing, for example), and let olive oil cover the rest of the stove.

Smoke points are well-established, outside the seed oil debate. Olive oil is genuinely fine for most home cooking — sautéing and roasting up to ~400°F — despite the myth that it can't be heated at all; just save it from a true high-heat sear or deep-fry, where avocado oil, ghee, coconut oil, or tallow hold up better. One myth worth dropping in the other direction: mixing butter with a higher-smoke-point oil doesn't raise butter's own burning point — its milk solids will scorch at the same ~300–350°F regardless of what's blended in. Ghee (butter with those milk solids removed) is the actual fix if you want that flavor at real high heat.
02 Proteins & Dairy Sourcing How the animal was raised isn't only an ethics question — it changes the nutrition too.

Grass-fed beef tests higher in omega-3s and conjugated linoleic acid (CLA), a beneficial natural fatty acid — solid, peer-reviewed data, and the standard in Plant Paradox, Genius Foods, and Deep Nutrition (Shanahan's "meat on the bone" pillar is built on pasture-raised sourcing specifically).
A2 milk is Plant Paradox's specific pick: preliminary evidence it's gentler on digestion than regular (A1) milk, worth trying if your kids react to regular dairy. Overall evidence is still called "insufficient," not proven.

Plant Paradox, Genius Foods, and Deep Nutrition all call out egg quality specifically. The underlying reason: a pastured hen forages for her actual natural diet — bugs, worms, grasses, seeds — instead of living caged and eating a corn/soy-based feed, which isn't what chickens evolved to eat. That diet difference shows up directly in the egg. A Penn State study found pastured hens' eggs had roughly double the vitamin E and more than double the total omega-3s of eggs from commercially-fed hens, with a meaningfully better omega-6-to-3 ratio. Lugavere's own ranking reflects this: pasture-raised > omega-3 enriched > free-range > conventional — tied to eggs' choline (brain and memory support) and the lutein/zeaxanthin in the yolk (eye health). Shanahan goes further, citing research that people eating 6+ eggs a week live longer with fewer heart attacks than egg-avoiders — and pastured, not conventional, is her baseline. If budget's tight, these books are clear that conventional eggs are still a highly nutritious food — this is about upgrading, not avoiding.

Max Lugavere — Genius Foods Resources (egg & protein sourcing)
This is a firm line in two of the five books. Plant Paradox puts farmed fish on the "no" list outright and names wild-caught salmon, shellfish, and mollusks as the approved swap. Genius Foods is just as specific: Lugavere names wild salmon by title as one of his ten genius foods, citing its low mercury, high EPA/DHA omega-3s, and astaxanthin (a carotenoid tied to brain and eye health).
Gundry puts grass-fed French or Italian butter and ghee on his approved list, alongside A2 milk — high-fat dairy carries little to no casein, and grass-fed sourcing tracks the same nutrient upgrade as grass-fed beef. Deep Nutrition lands in the same place from a different angle: Shanahan's baseline is butter, eggs, cheese, and whole milk from pastured animals, organic if pastured isn't available. Good swaps if regular dairy is a household sensitivity.
Beyond individual cuts, our actual system: once a year we buy half a pig and half a cow from local farms we know and trust, and fill the freezer. It's the most direct way we've found to guarantee sourcing (grass-fed, pasture-raised, no guessing at the grocery store) and it's usually more cost-effective per pound than buying the same quality piecemeal. Not something any of the five books specifically prescribes — just how we've chosen to solve the sourcing question for our family.
03 Organic vs. Conventional Where it actually moves the needle.
Plant Paradox, Genius Foods, Good Energy, and Deep Nutrition all recommend organic over pesticide exposure — Shanahan is explicit about it, pairing organic produce with pasture-raised meat and dairy as her baseline. What's solid: switching to organic measurably lowers pesticide levels in the body within days — most relevant for what your kids eat daily. Four of five books agreeing is a reasonable basis for a precautionary habit.

Worth naming: Plant Paradox, Genius Foods, and Good Energy all put leafy greens and cruciferous vegetables (spinach, kale, broccoli, Brussels sprouts) at the center of their "eat plenty of" list — Good Energy specifically recommends at least 2 servings of cruciferous vegetables daily. That's exactly where the Dirty Dozen and organic question overlaps most for your family: spinach and kale/collards are both Dirty Dozen items. Outlive doesn't restrict vegetables but doesn't single these out the same way.
A few common questions worth answering directly. Sweet potatoes are a different plant species than white potatoes (not even related botanically) and current EWG testing doesn't place them on the Dirty Dozen — conventional is a reasonable choice. Green beans didn't make the official top 12 either, but EWG specifically flagged them as a "near miss," ranking among the highest for overall pesticide toxicity of anything tested — if you eat them regularly, buying organic is a reasonable call even though they're not on the official list. Brussels sprouts don't have confirmed EWG ranking data either way in current testing, so there's no strong evidence either direction. None of the three have the same hard data behind them as the actual Dirty Dozen items — but we default to organic for all three anyway, more as an easy precaution than a data-backed rule.

Spinach tops the list with more pesticide residue by weight than any other produce tested. Every item averaged four or more pesticides per sample except potatoes (two). The 2026 report also flagged PFAS ("forever chemical") pesticides on 63% of Dirty Dozen samples. Nearly 60% of Clean Fifteen samples had no detectable residue at all. Note — some U.S. sweet corn and papaya is GMO; buy organic if that matters to you.

04 Grain Based Carbs Why bread, pasta, cereal and rice are not the center of our plates
Where to look
- Breakfast built around cereal, toast, muffins or waffles
- Sandwiches, wraps or crackers standing in for a full meal
- Pasta or rice taking up most of the plate
- Snacks made almost entirely from refined flour
- Meals with plenty of starch but very little protein
Good Energy and Genius Foods make the clearest metabolic case for reducing refined, grain-based carbohydrates and building meals around foods that support steadier glucose, energy and satiety. Deep Nutrition also argues against refined flour and sugar displacing more nutrient-dense traditional foods. The Plant Paradox goes further, recommending that many grains be limited because of their lectin content—one of the book's more contested claims. Outlive is not anti-grain, but Peter Attia emphasizes adequate protein, muscle preservation, metabolic health and matching carbohydrate intake to the individual's activity level and glucose response.
The body needs glucose, but it does not necessarily need that glucose to arrive as dietary carbohydrate. Protein supplies essential amino acids—the building blocks the body cannot make on its own and needs for growth, tissue repair, enzymes, hormones, immune function and the maintenance of muscle. There are no "essential carbohydrates" in the same biochemical sense as essential amino acids and essential fatty acids.
Between meals, the liver helps maintain blood glucose by releasing glucose stored as glycogen. As liver glycogen runs lower, it can make additional glucose through gluconeogenesis, using lactate, glycerol and certain amino acids. Dietary carbohydrate can replenish glycogen more quickly, which can be particularly useful for growing children and people doing frequent or high-intensity exercise. But this is different from saying that bread, pasta or cereal must form the foundation of every meal.
Our concern is not that every grain is harmful. It is that grain-based foods—especially refined ones—are easy to make the largest part of the plate. When that happens, they can crowd out protein, vegetables, nourishing fats and foods with greater nutrient density. Refined grains are also digested quickly and may be less satisfying when eaten without enough protein, fiber or fat.
So we reverse the usual order. Start with a meaningful protein. Add vegetables or fruit and a nourishing fat. Then add a carbohydrate when it serves the meal: potatoes, squash, beans, fruit or a thoughtfully chosen grain. Whole grains can absolutely fit. They are simply an accompaniment rather than the automatic foundation.
05 Bread & Flour If you can't count the ingredients on one hand, that's not bread.

Real bread is a short list: flour, water, salt, yeast, maybe a little fat or honey. Commercial bread routinely carries 10–12+ ingredients — dough conditioners (DATEM, azodicarbonamide, enzymes, L-cysteine) to speed up industrial mixing, emulsifiers to keep it soft on a shelf, and a preservative like calcium propionate to fight mold, since sliced bread has to survive weeks at room temperature instead of going stale in a day or two the way real bread does. One emulsifier worth flagging by name: carboxymethylcellulose (CMC) — the same cellulose gum already flagged under Gums & Thickeners — has actual human trial data linking it to altered gut bacteria. Deep Nutrition's fermented-and-sprouted-foods pillar leans the same direction, favoring slow-fermented grains over industrially processed ones, though the book doesn't specifically address ingredient-list length the way we're framing it here.
This one is a direct, named claim: Gundry calls real sourdough — made with just organic flour, water, salt, and a sourdough starter — "one of the safest and least injurious breads" and the single grain exception in Plant Paradox, best treated as an occasional food rather than a daily one. His own caveat is worth carrying with it: he warns that most modern "sourdough," including commercial loaves labeled that way, skips true slow fermentation entirely and uses fast artificial leavening instead — so the label alone doesn't guarantee the real thing. A long ferment time and a short ingredient list are the actual tells.
This is the same "white is right" logic behind the rice guidance in Crackers & Tortillas, applied to bread. Gundry's specific claim: white bread and other refined starches are actually less problematic than their whole-grain counterparts, since the bran — stripped out in refining — is where most of the lectins concentrate. It's a genuinely counter-mainstream stance (most nutrition guidance favors whole grain over white), and it sits in real tension with Genius Foods, where Lugavere generally avoids refined grain products. We're not picking a side here, just naming that these two books disagree, and that sourdough is Gundry's actual preferred exception either way.
06 Crackers, Tortillas & Rice Same rule as bread, same reason.
Look for
- Crackers with 5 or fewer ingredients (flour, oil, salt is the benchmark)
- Flour tortillas: flour, water, fat, salt — bare minimum
- White rice (jasmine, basmati), rinsed before cooking
- California-grown rice, when labeled
- Pressure-cooked rice, when possible

Crackers and tortillas run into the exact same additive families as bread, for the exact same reason — long shelf life at room temperature. A traditional flour tortilla is genuinely just flour, water, fat, salt, and a leavener — nothing else needed. Commercial versions often add dough conditioners (sodium stearoyl lactylate, L-cysteine), preservatives, and sometimes gums purely for shelf stability — not flavor or nutrition. The tell is the same one we use everywhere else in this guide: count the ingredients, and know what each one is doing there.
A direct, named claim: "Swap your brown rice for white" is one of Gundry's specific hacks in the book, reasoning that lectins concentrate in the bran and hull removed during milling — the same "white is right" logic behind the bread guidance on the previous page. He tells a specific story on his own platform about a patient with rheumatoid arthritis whose pain and inflammatory markers improved after switching from brown rice to white basmati. Both technically sit on his stricter "no list," but he's clear white is the better of the two, and pressure-cooking further reduces residual lectins. Worth flagging honestly: this cuts against Genius Foods, where Lugavere generally avoids "refined grain products" — a genuine disagreement between two of the five books, not a unanimous stance.
Independent of any book: arsenic is rice's real, well-documented contamination issue, and it's naturally occurring in soil and water, not from pesticides — so organic and conventional rice test at essentially the same arsenic levels (confirmed across EWG, FDA-cited comparisons, and Dartmouth's arsenic research group). What actually matters: brown rice carries roughly 50–80% more inorganic arsenic than white rice of the same type, since arsenic concentrates in the bran — the same layer Gundry has you removing for lectin reasons, so two unrelated mechanisms land on the same practical answer. Growing region matters too: California-grown and Southeast Asian rice (jasmine, basmati) test lower than rice grown in the south-central U.S., where soil often carries residual arsenic from historical cotton-farming pesticide use. Rinsing rice before cooking, and cooking with excess water that's then drained, can reduce arsenic content by another 40–60%.
07 Cheese What Plant Paradox actually approves.
Parmigiano Reggiano and "parmesan" are not the same product.
This is the single clearest example of Gundry's whole argument, which is why it's the first thing we check. Parmigiano Reggiano is a protected-origin cheese made from the milk of Italian cows, which carry A2 casein rather than the A1 casein in most American dairy — the protein difference Plant Paradox is built around. It's aged at least 24 months, and that long aging is the nutritional part: most of the casein leaves with the whey and the lactose largely breaks down, so what's left is mostly fat, and it's naturally made from three ingredients — milk, salt, rennet. Nothing else is allowed in it.
Generic "parmesan" is a name, not an origin. It's typically young cow's-milk cheese from A1 herds, and the grated and pre-shredded versions carry anti-caking agents like cellulose. Same shelf, different food. The tell is the stamped rind — if it doesn't say Parmigiano Reggiano on the rind, it isn't.

Beyond Parmesan, Plant Paradox's approved dairy list runs goat cheese, sheep cheese, buffalo mozzarella, and high-fat aged European cheeses like triple-cream brie. Gundry's reasoning: goat and sheep milk are naturally A2, and in high-fat aged cheeses most of the casein processes out with the whey, leaving mostly fat. For cow's milk cheese specifically, our priority is grass-fed first — A2 is a nice-to-have when we can find it, not something we chase down every time.

Processed cheese (American cheese, cheese "product," pre-sliced singles) is melted with emulsifying salts — usually sodium phosphates or citrates — to stay smooth and shelf-stable, which is also why it runs higher in sodium than natural cheese. Peer-reviewed research (American Journal of Clinical Nutrition, Kidney International) links high phosphate-additive intake specifically to cardiovascular, kidney, and bone risk. Plant Paradox names American cheese as one to skip — real, aged cheese is the better default.
Bagged, pre-shredded cheese is coated in an anti-caking agent to keep the strands from clumping — usually cellulose (the same "cellulose gum" already flagged under Gums & Thickeners), potato starch, or calcium sulfate, sometimes with natamycin added as a mold inhibitor. There's no strong evidence these are harmful in the amounts used, but they're genuinely why bagged shreds melt grainy instead of smooth. We buy blocks and shred at home — fewer additives, better melt, and it's genuinely just as fast with a food processor.
08 Spices & Pantry Staples Not produce, but worth the same closer look.
Look for

- Non-GMO canned goods, especially corn (organic is always non-GMO)
Plant Paradox specifically lists fresh herbs (mint, parsley, basil, cilantro) and antioxidant-rich herbs and spices among Gundry's approved foods, with organic as his general standard wherever possible. Beyond that, there's a separate, solid regulatory reason of its own: nearly all conventional dried spices sold in the U.S. are required to be sterilized before sale, usually with fumigation (ethylene oxide — a known carcinogen already banned in the EU for food, still legal here), irradiation, or steam, since they're not washed before packaging. USDA organic rules prohibit both irradiation and ethylene oxide outright, so "organic" on a spice jar reflects a real, verifiable processing difference, not just a premium label.
Coffee and tea aren't produce, so they're not on the EWG's list — but they're worth flagging on their own. Coffee is one of the most heavily pesticide-treated crops grown, and it's also prone to mold-related mycotoxins during processing and storage; organic certification cuts pesticide exposure but doesn't guarantee mold-free, so a brand that's both organic and mycotoxin-tested is the more complete answer. Tea is arguably an even clearer case: leaves go straight from the plant into your cup with no washing step in between, so whatever's sprayed on stays on. A peer-reviewed study on Japanese green tea found meaningfully lower pesticide residue in organic versus conventional leaves. This is just something our family buys organic, not a claim from any of the five books.
This one's a direct claim: Gundry tells readers to avoid GMO corn and soy specifically. His main reasoning holds up — the vast majority of GMO corn and soy grown in the U.S. is bred to tolerate heavy glyphosate (Roundup) spraying, so conventional corn products often carry more herbicide residue than other crops, and he's also wary of the engineered Bt (Cry) insect-resistant proteins bred directly into the plant, which humans have no long history of eating. Mainstream regulators (FDA, EPA) consider approved GMO corn safe to eat; the real disagreement is over herbicide residue and long-term data, not the corn itself being inherently toxic. Practically, this matters beyond the corn can itself — corn syrup and modified corn starch show up as fillers in a lot of canned soups, beans, and sauces, so "non-GMO" on canned goods generally is the broader habit, not just canned corn. The easiest shortcut: USDA organic certification prohibits GMO ingredients outright, so "organic" on the label is always a safe non-GMO bet — no need to hunt for a separate "non-GMO" seal if it's already certified organic.
09 Sugar & Sweeteners Added sugar hides in more than dessert — and not every substitute is a safe swap.

Whole dates carry 7–8g of fiber per 100g that measurably slows sugar absorption, giving them a lower glycemic index (~42) than table sugar (~65) — a real, whole-food difference, not marketing. Raw, unheated honey scores similarly (~48–58 GI) and keeps enzymes and antioxidants that pasteurized honey loses; a 2022 meta-analysis of 69 trials found modest improvements in fasting glucose and cholesterol versus sugar. Ripe bananas carry a moderate GI (~42–62, rising as they ripen) but with real fiber, potassium, and vitamin B6 attached, plus resistant starch and pectin that slow the sugar hit compared to eating sugar alone. None of these are health foods — all still count as sugar, and moderation still matters. One flag worth knowing: Genius Foods actually lists "date sugar" among the hidden names for added sugar to watch for on packaged labels — that's about processed date sugar snuck into packaged food, not whole dates eaten as fruit, but it's why we're specific about "whole."
A huge share of what's sold as maple syrup — "pancake syrup," "table syrup," most name-brand breakfast syrups — is actually corn syrup or high-fructose corn syrup with artificial maple flavoring, caramel coloring, and thickeners; real maple sap is nowhere in the bottle. The fastest tell: real maple syrup has exactly one ingredient on the label ("maple syrup," "pure maple syrup," or "maple sugar"). Fake syrup is also thicker and more uniformly colored; real syrup pours thin and varies in color by grade and harvest. It takes about 40 gallons of maple sap to make one gallon of the real thing, which is why genuine maple syrup costs meaningfully more — a suspiciously cheap bottle is a tell on its own.

Worth being precise here: Max Lugavere personally uses and recommends an RO system on his own site, saying it's what he uses "to remove heavy metals and endocrine disrupting chemicals" from his tap water, paired with remineralization drops afterward. Not from the books — independent, well-documented science. An Environmental Working Group report found roughly 1 in 5 Americans may be drinking water with detectable nitrate contamination, mainly from agricultural fertilizer runoff into groundwater, streams, and public water systems. EWG's report links low-level nitrate exposure to thyroid disease and gastric, kidney, bladder, and colon cancers, along with preterm birth and birth defect risk. A water-quality expert cited in the same reporting specifically recommended an RO system on the kitchen cold tap for anyone testing above 3 mg/L nitrates.
RO is genuinely one of the most effective home treatments available — research puts PFAS ("forever chemical") removal at 90–99%. The EPA's 2024 PFAS drinking water regulation set enforceable limits partly because PFAS is now detectable in the blood of 97% of Americans tested. He's also widely reported to prefer organic or biodynamic bottles when possible, though that specific preference comes from secondary sources built around his work rather than a direct, sourced line we could verify in the book itself.
Worth getting exactly right, since it's easy to overstate: Spain, France, and Italy together produce about 75% of the world's organic wine — but that's not the same as most wine from those countries being organic. Only around 12–22% of European vineyards are actually organic-certified (France leads at roughly 22%, up from 6% in 2010). The accurate version: Europe dominates global organic wine production, and natural wine is a real, fast-growing niche there — but it's still a minority of what's actually farmed, not the default.

California Department of Public Health data, reported across multiple outlets, shows cancer rates in Napa, Sonoma, and Mendocino counties running 10–20% higher than state and national averages. The caveat: this reflects community and agricultural exposure — farmworkers and residents near spray drift — not a proven link from drinking the finished, bottled wine itself, which is a very different and much lower exposure pathway.
